i worked at an arby's and our fryers broke once (all of them). basically they wouldn't drain the oil to be replaced with new oil. this was supposed to be done like twice a day IIRC, to keep the oil clean and fresh. However my manager was a lazy jew who didn't care so the store was kept open while this very critical hygiene procedure was broken for like 3 months. I think someone at the store eventually found a way to manually switch the shit out but it was messy, not very thorough, and a pain in the ass so it still wasn't being done nearly often enough. the oil got so dirty that every fried product had little black spots on them and were slightly gray after coming out of the fryers.
