Short answer: she's cute
Short-ish answer: She's part of the popular 'tsundere' archetype and is a character who you like the more you understand her. She has an incredible depth absent from many anime characters. She's also cute.
Longest Answer: She fits pretty well into the 'tsundere' archetype too, which is fairly popular among anime fans, but even so she's a pretty well developed character, almost none of the Eva characters are one note, but being a main character she's gifted more character building than most. She's deeply flawed, though it's hard to blame her given her age. She's a teenage girl with a lot of pride and the weight of the world on her shoulders. I think it may be easy for some viewers to relate to her too. Whilst some may relate to Shinji's feeling of burden, Asuka suffers from a second problem alongside that: expectation. Expectation she receives from others, and the expectation she puts upon herself. The second part is extremely relatable too, failing to meet the expectation one puts upon oneself is all to common and can be emotionally damaging, especially if consistently done overtime. I think she's both relatable and deep. It's quite easy at first to write her off as a bitch, I know I thought she was the first time I watched it, but the more you get to understand her the more you feel bad for her and even find parts to relate with her. It goes from disliking her to understanding and liking her. In fact, this arc may be why people like her so much, the emotional connection you feel to a character is probably stronger if you begin with hating them and grow to like them, instead of a character who's just perfect from the start. Oh, and she's cute.
