I've only played the base game of warband, which, as far as I know, is just an expanded version of the original. The viking and napoleonic things are dlcs for warband, but the former is multiplayer only and the latter doesn't seem to have been very well received. With fire and sword is like warband but set in the area around poland during the pike and shot era instead of a made up continent in the 13th century, but I've heard next to nothing about it actually being played. People who like warband don't seem to like bannerlord very much for whatever reason, but I don't know much about it. Basically, start with warband because the other ones are dnbs. Here's a trade map I found on the forums that was somewhat useful, dobeit I do suck bibisi at the game

I've been playing M&B on and off since the release of the first game and you're mostly right.
A few things:
There's no reason to play the first game unless you want to play the Star Wars mod (which is really high quality). Warband is the first game but bigger and better in every single aspect
Viking Conquest used to be a dnb when it came out but it's actually really really good now after years of patching. If you're going to play it then the Balance Mod is a must in my opinion. There's also a massive overhaul mod in the works called Enhanced Edition but I doubt its coming out anytime soon. VC's story mode is a solid 9 out of 10.
Bannerlord is decent, most of the discontent stems from the fact that the Turks break the mods with every update they push, and the campaign AI being kinda stupid. Also War Sails was a half assed half cooked scam. Will probably take years for it to be good.

I'd recommend warband. it's my most played game on steam, mostly modded, native is good too doebeit.
I haven't played bannerlord but I've heard a number of complaints about various things. seems to have less depth, the companions are also all procedurally generated and therefore samey and dull. I think it's improved since launch but I haven't kept up
