Is there any snopes verified evidence of security vulnerabilities or big brother back doors in macos or apple computers for people who do serious illegal stuff on their device?

Can you point to a single reason why it would be a bad idea for someone like Osama Bin Laden to use an Apple Laptop in his cave in Afghanistan?

if the software is not audited, consider it compromised
you cannot claim to know anything about security if this fact is not common sense

and the same is true of hardware - although you can't be as absolutist about avoiding closed source hardware, since you'll be limiting your options to almost nothing. CPUs that don't have intel ME or amd PSP, and which were never affected by spectre or meltdown are a good choice (intel atom, many AMD cpus). you should really focus, maybe even more so, on using open source network interfaces and routers. remember that if intel ME is a backdoor, it ain't shit without intel network interfaces ALSO having backdoors too

and i'm talking about old intel atoms specifically. the dual core ones from like, before 2014

There are a few solutions
1. Don't use your own hardware when interacting with the internet
2. Encrypt sensitive data
Whether or not you switch to older models depends on your threat model.
Although, now that you mention it, you/OP might have a good point about using a standard mac. If Osama wanted to stay under the radar and not stand out he should probably use whatever the most common computer is and just keep his data safe.
