CPUs that don't have intel ME or amd PSP, and which were never affected by spectre or meltdown are a good choice (intel atom, many AMD cpus). you should really focus, maybe even more so, on using open source network interfaces and routers. remember that if intel ME is a backdoor, it ain't shit without intel network interfaces ALSO having backdoors too

1. Don't use your own hardware when interacting with the internet
2. Encrypt sensitive data
Whether or not you switch to older models depends on your threat model.
Although, now that you mention it, you/OP might have a good point about using a standard mac. If Osama wanted to stay under the radar and not stand out he should probably use whatever the most common computer is and just keep his data safe.
