The original translation was done by native Japanese speakers who learned English, while the remastered was done by native English speakers who learned Japanese
You may be tempted then to immediately jump into the remastered translation, which is fine, but both still have their merits
The original doesn't really attempt to localize anything into an English equivalent. It uses the romaji for anything Japanese. The character's names are also written in the Hepburn romanization as opposed to the Kunrei-shiki romanization the remastered uses. You can compare the two if you'd like.
The dialog in the original may come off more blunt and straightforward, while the remastered prefers to use the more metaphorical kind of writing used in the translation for Umineko. Ideally we'd have a mix of both, but oh well
Ultimately up to you, but I would go with the original
