Brotherhood and the original anime are about equal in quality, despite what Brotherhood fanboys will tell you. Which you'd like more ultimately depends on what you like and what you hate in anime.
<reddit spaceThe original is more serious, stays more grounded, has better and more interesting character development, but has a bunch of shit plotholes, worse pacing, a couple more filler episodes, and a less fulfilling but (in a way) more climactic, despite being much lower stakes, ending.
<reddit spaceBrotherhood is more consistent, has better animation, alchemy makes sense the whole time, is more hopeful/wholesome, but the last 1/3rd is borderline Marvel-tier plot armor, the stakes get a bit ridiculous, too many undeveloped characters, and it's not as interesting. The first episode is anime-only and is really weird now since it was made for people who watched the first anime to see it and think "wow it's following the manga now!".
I prefer the original anime. I don't mind looking past something's flaws if it has much more interesting and compelling ideas than something "better" that doesn't. It just depends what you like. I recommend watching both, though! They complement each other quite well. It's interesting how their flaws and strengths are an almost complete inverse of one another.
