if i use firefox incognito mode on android and my history, cache, cookies, etc all clear on closing the browser, is it really cleared? as i understand files are only deleted when overwritten, so how much of my browsing activity can be recovered by forensic examination?

Assuming that your phone isn't constantly spying on you (which it is) and the actual incognito data files are being deleted off of the filesystem, then the data remains on your hardrive but not filesystem and it's free to be overwritten. If it's not overwritten it can be recovered, but there are programs that will format any data on the drive that are not in the filesystem.
