Just write your own OS. Most documentation is for the 386 (and 686 I believe they're basically the same). If you're on a pentium 3 then the rest of your hardware is probably old enough to have documentation and code from other hobby OS projects.

I lied. My pentium and most other unambiguously i686 CPUs are safe I think. Just some seca AMD CPUs sadly
