I personally like ed.
>Ed is the standard text editor.
Its really simple, no fuss, and isnt full of trannies like vim. On that note, ex and nvi/vi are good as well but they just have too many modes for me, anything over 2 personally just confuses me since im kinda stupid geg. Ed is perfect since its small, no fuss, fast, and edits text, which is all you could and should ever want from a text editor.

you should start by using ed and getting familiar with the commands, then using the classic ex/vi (Not vim), then after getting used to that, switch to vim, since thats how the software evolved. It will help you get familiar and logically understand how it connects

i use the standard GUI text editor in debian (forgot its name) for my diary, but i use ed for everything else since it feels closer to the metal which i like
