I do use cockli, but I don't trust its reliability. Also its not a good look when my professor sees me with email: johndoe@nigge.rs The application isn't anything glowy, they just ask you what you do before bed (jerk off, obviously). I would definitely try i2p again in the near future too. My only problem is my dad forgot the router admin password so I can't do any of the port fucking required for i2p.

you don't need to port forward to use i2p and you can still route other peoples' traffic without doing it so don't worry too much about it

i think the best wya to go is to just use cock.li because it's simlle and just werks tm, if you want there are the normal looking domains on there (airmail.cc etc.)
you could host your own clearnet email on your own domain so that you can sign up for stuff without having to worry as much about losing your addresses but honestly if i were you there'd be a total of 2 or 3 things i'd use it for

both tor and i2p are good but iirc tor services don't hop nodes
tor and i2p can both be used to play minecraft(good way to test it out), and i2p i think does udp sockets? i hear so

if you want to host a minecraft server on tor or i2p, just download the tor daemon or i2pd and then configure it to route properly
note that to get minecraft clients to connect to them you have to port forward to localhost
i.e. route the traffic to localhost:x and then connect to that in minecraft
